Recipe for Oysters Stewed in Their Own Liquor
(S.n.): [early 1800s?]. Single leaf, about 5" x 7 3/4" Paper shows foxing, edge chips, and old fold creases.
Old ink handwritten recipe for oysters, which reads:
Strain your oysters put the liquor on and stew it well and skim it untill you get all the liqur clear then add some whole grains of cloves salt and read pepper then put your oysters in and let them cook as long as stewd ones then take them up and when cool add vinegar to the taste.
Old pencil notation in a different hand at end of recipe, and again on the back of the leaf, seems to attribute the recipe to a "Miss Leuesetia (or Leucretia?) Holland."
